Pasta Egg Fritter Recipe

INGREDIENTS
- Leftover cooked short pasta: 3/4 cup
- Egg: 1
- Kissan Fresh Tomato Ketchup: 2 teaspoons
- Grated cheese: 1 tablespoon
- Grated carrot: 1 tablespoon
- Chopped coriander: 1 tablespoon
- Soya sauce: 1/2 teaspoon
- Oil: 2 teaspoons
METHOD OF PREPARATION
- Crack egg in a small bowl. Add ketchup, cheese, coriander, soy sauce and whisk well.
- Ketchup helps add flavor to pasta while masking the eggy flavor, making it more appealing for kids.
- Add cooked pasta into this and toss well.
- Heat a non-stick pan. Pour 1 teaspoon of oil into the pan and coat the surface.
- Pour 1-2 tablespoon of pasta-egg mix to make small pancakes.
- Drizzle some oil around the edges, turn over and cook other side similarly.
- Pack in keep-hot lunch boxes
